Spices and laughter fill the air as our excited employees stack their plates with this Meatless Monday special. Jess brings the farm to table, or rather to the office, with fresh avocado, cilantro, and bell peppers marinated in her secret, mouth-watering fajita sauce.

How could we not get creative and sink our teeth into these faux chicken and beef, whole wheat wrapped burrito goodness!

The first Monday creation included sweet and savory crepes created by our Vegan Travel sagacious Shannon. She says she omitted the nutmeg and vanilla from this recipe, but recommends “to include those if you’re going for a sweet crepe.”

The second Monday, Shannon stepped up again and treated us to one of her weekly menu staples: Acai Bowls. “These are smoothie bowls that you can top with anything you like, and we will have a special “topping bar” so you can customize your own bowl.” The masterpieces of taste sparked a full day of great thoughts and productivity.

DirectNET Meatless Monday July Veggie ChefWe would usually have yoga on Mondays but during this third week of July it was moved to Wednesday which worked out very well. The featured meals prepared by our own in-house chefs, Chris and Andre, filled everyone’s bellies to the max with their Ratatouille, Bean Soup, Butternut Squash, and Salad. With Chris’ chef background and Andre’s creativity, the afternoon quickly became enjoyable and memorable smorgasbord of flavors.

The month concluded with our CEO and accomplice whipping together their very addictive, traditional family recipe of Moroccan couscous. Plus, Shannon made a surprise dessert of Chocolate Pudding Pie with Peanut butter frosting and Chocolate Chip Cookies with a Caramel drizzle –all Vegan friendly and amazingly delicious. Who knew Vegan food could be so sweet!

Meatless Mondays

As an environmentally conscious company, we are always looking for ways to be more efficient and reduce our own carbon footprint. One such initiative we feel strongly about is Meatless Mondays – the global campaign to make the world more sustainable by reducing our consumption of meat by 15% – just 1 day per week.

Cutting meat just one day per week can have a huge benefit on your health. It can help reduce heart disease and stroke, limit cancer risk, fight diabetes, curb obesity, help you live longer, and even improve the nutritional quality of your diet. Not only is it great for your own personal health, but it’s also beneficial to the health of the planet. Cutting out meat one day a week would help minimize water usage, reduce greenhouse gases, and reduce fuel dependence. For more detailed information and figures, click here.

In a recent report by the Dietary Guidelines Advisory Committee (DGAC), they asked Americans, “to make health a national priority, and for organizations, private business, and communities to work together to create a “culture of health” in which healthy lifestyle choices are easy, accessible, and affordable.” (1) The report found that we are under-consuming key food groups such as vegetables and also noted that there is evidence citing that a “higher intake of red and processed meats was identified as detrimental compared to lower intake.” (1) Many of these findings would support a Meatless Monday initiative. DirectNET and Meatless Mondays

Since 2010 DirectNET has been actively promoting Meatless Mondays through our websites. Additionally we offer free, meatless lunches for all our employees and we actively promote Meatless Mondays to the millions of IT Professionals who visited our company websites. With their technical knowledge and talents we are hoping this will have a very positive domino effect as they use their technical gifts to inform and educate others about the importance of adopting Meatless Mondays.

The Meatless Monday meals we have been ordering are 100% free of any animal products. Each week we order meatless meals from local restaurants. Some chain restaurants like Native FoodsNoodles and Company and Chipotle Mexican Grill clearly market their vegetarian/vegan options, other restaurants are happy to oblige a meatless request and can easily modify their dishes to accommodate – especially if you give them a day or two notice in advance. It also helps to have a palate that is open to the wonderful international options we have available to us. The dishes we have ordered for our Meatless Mondays and company sponsored events have included dishes from local Chinese, Italian, Thai, Mexican, Indian, and Middle Eastern restaurants. In addition to our Meatless Mondays efforts, any food served at all our company sponsored events is also meatless and vegan.

Going Meatless one day per week is easy! It’s good for the environment and for the health of you and your family. We encourage you to consider going meatless one day per week, and sharing this info with your company or organization as well as your vendors, customers, and your friends and family.
